  • 1 1/2 cups flour
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon baking powder
  • 1 teaspoons kosher salt
  • 1 tablespoon sugar
  • 1/2 pound uncooked bulk sweet pork sausage , broken into small pieces
  • 1 cup pimento cheese dip , softened
  • 1/4 cup whole milk
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons butter , melted
  • cooking spray
  • Garlic Aioli , optional for dipping
  • chipotle aioli , optional for dipping

Instructions

  1. Preheat the oven to 350°F. Lightly coat a rimmed baking sheet with cooking spray or line with parchment paper.
  2. In a large mixing bowl or bowl of a stand mixer fitted with the paddle attachment, combine the flour, baking soda, baking powder, salt and sugar. Whisk before adding the other ingredients.
  3. Add the bulk sweet pork sausage, pimento cheese, milk and ground black pepper. Mix until combined. Dough will be super sticky, this is normal.
  4. Gently mold the sausage mixture into 1-inch balls and set a minimum of 1 inch apart on the prepared baking sheet.
  5. Bake for 20 minutes, or until center registers at 145°F and the tops are lightly browned.
  6. Remove and baste with the melted butter.
  7. Serve sausage balls hot with aioli dipping sauce, or your favorite dipping sauce.

Notes

  • You can also substitute 1 1/2 cups self rising flour and omit all purpose flour, baking soda, baking powder and salt. 
  • Use spicy sausage or flavored sausage for a little kick. 
  • You can also use chicken sausage opposed to pork. 
  • Add a pinch of garlic powder or onion powder to the melted butter before basting.
