Pizza Soup is a delicious tomato based soup that is loaded with pepperoni, vegetables and easy seasoning. Tasty soup topped with cheese and served with french bread.

Ingredients

  • 1 pound Italian sausage
  • 1/2 onion chopped
  • 6 oz tomato paste
  • 2 cans crushed tomatoes 14.5 oz each
  • 32 ounces chicken broth
  • 1 teaspoon minced garlic 
  • 1 teaspoon Italian seasoning
  • 1 teaspoon sugar
  • 4 oz pepperoni quartered
  • 1 red bell pepper chopped
  • 2 cups mozzarella cheese shredded

Instructions

  1. Brown the Italian sausage with the diced onion in a large stock pot or dutch oven over medium high heat.  Break up the sausage as it browns.  Once browned, drain off any of the excess grease.
  2. Stir in the remaining ingredients except for the shredded cheese.
  3. Bring the mixture to a boil, reduce the heat to low and simmer for 10-12 minutes until the bell pepper is tender and the soup has thickened.
  4. Stir in the shredded mozzarella cheese.  Cook for 2-3 minutes until the cheese has melted.
  5. Serve warm with bread or topped with croutons and enjoy!

Notes

  • Refrigerate the leftovers in an airtight container for up to 5 days. 
  • You can easily use ground beef instead of ground sausage in this recipe if you prefer.
