													Inspired by Greek cuisine, this Pork Souvlaki with Grilled Vegetables recipe is easy and delicious!

                                Ingredients
- 1 lb pork cubed
 - 1 onion cut into large sections
 - 2 sweet bell peppers cut into 1/2 inch strips, then in half again
 - 2 tomatoes de-seeded and chopped (or cherry tomatoes)
 
for the Marinade:
- 1 teaspoon oregano divided
 - 2 teaspoons garlic
 - 2 Tablespoons lemon juice
 - 2 Tablespoons oil divided
 - salt and pepper as desired
 
Instructions
- Soak wooden skewers in water for 30-45 minutes.
 - Place pork cubes in a large plastic zip-top bag.
 - Whisk together the marinade together (1/2 teaspoon oregano, garlic, lemon juice, 1 T oil, salt, and pepper) and add to the bag of pork. Refrigerate for at least 30 minutes, making sure all the pork is coated.
 - Add prepped vegetables to a large bowl with the remaining oil and oregano, and a pinch of salt and pepper. Toss to coat the vegetables.
 - Preheat grill to 350°F or medium heat. Spray to coat or rub oil on the grill with an old kitchen towel (before the grill is hot).
 - Add pork and vegetables to skewers, alternating meat and veggies. Use 4-5 pieces of meat on each.
 - Spray the grill or wipe with oil and a kitchen towel if you feel it's necessary.
 - Place the skewers on the grill and cook for 10 – 12 minutes, rotating halfway through, until the pork is cooked through and the vegetables are tender. Pork should have an internal temperature of at least 145°F.
 - Remove from the grill and allow to rest a few minutes before serving.
