Pressure Cooker Boiled Peanuts

  • 1 lb raw peanuts
  • ½ Cup kosher salt
  • 10 Cups water

Instructions

  1. Place the peanuts into a colander and rinse well with water. Use care to remove stems, sticks, rocks or anything that you notice clinging to the peanut hulls. Rub the peanuts well with your hands to remove any dirt.
  2. Place the peanuts, water and salt into the pressure cooker and stir well to make sure everything settles in together.
  3. Bring pressure cooker to high pressure and hold for 75 minutes (see notes). Allow for full natural release.
  4. Drain from water, keep refrigerated when not in use.

Notes

  • The amount of time you hold these peanuts at full high pressure is up to you. The longer they cook, the softer they become. I've done everything from 75 minutes up to 2 hours. You'll want to try this recipe several times and settle on the cook time you prefer for how soft you want the peanuts to be.
  • Definitely wash your peanuts with warm water before cooking. Remember that unlike roasted peanuts, whatever is on the shell will be cooked into the peanuts and you want them clean.
  • Remove stems and sticks and any obvious dirt from your peanuts.
  • Remove the broken and poor peanuts and discard or save to give to the birds.
  • Use Kosher salt. If you are using table salt, only use ½.
  • It's difficult to overcook these, so don't worry if you go over on the time. I've cooked them for as long as 2 ¼ hours and still had good results.
  • Pour the water off and let the peanuts drain in a colander then save in a zip lock container for up to 5 days.
