The proja is a traditional flatbread from the Balkan region that is made from cornmeal. It is called proha in Bosnia and Herzegovina.

Ingredients
- 1½ cup cornmeal
- 1 cup all-purpose flour
- 1 cup sparkling water
- 1 cup vegetable oil
- 2 egg beaten
- 1 teaspoon salt
- 1 tablespoon baking powder
- butter or margarine, for the mold
Equipment
- Stand mixer
Instructions
- Preheat the oven to 480 F (250 C).
- In the bowl of a stand mixer, mix all the ingredients with the flat beater and knead until obtaining a semi-liquid, homogeneous, lump-free dough.
- Pour the mixture into a 10-inch (24 cm) square baking dish previously greased with butter or margarine.
- Bake for 20 minutes at 480 F (250 C). Then, lower the oven temperature to 300 F (150 C), and bake for 10 additional minutes.
- After 30 minutes of baking, insert a toothpick into the proja. If it is dry, it is fully baked. If not, continue baking for 5 minutes.
- Cut the proja into 3-inch (8 cm) squares to serve.
Notes
- You can optionally add crumbled feta cheese to the dough.
