Ingredients
- 1 cup (240g/8oz) pumpkin puree
- 2 eggs*
- 1/2 cup (100g/3oz) vegetable oil
- 1 teaspoon vanilla
- 1 cup (240g/8oz) sugar
- 1 cup (150g/5oz) all-purpose flour
- 1/2 teaspoon salt
- 3/4 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon ginger
- buttercream frosting
- Rolled Fondant

Notes
- Store the cupcakes in an airtight container for up to 4 days.
