Instructions

  1. Preheat the oven to 350°F and prep a muffin tin with cupcake liners.
  2. In the bowl of a stand mixer, cream together the softened butter and granulated sugar until light and fluffy.
  3. Mix in pumpkin spice, salt, baking powder, vanilla, milk, oil, pumpkin puree and egg whites until well combined.
  4. Add the all purpose flour slowly, mixing as you add, until the dough has no big lumps. Scrape the sides of the bowl as needed.
  5. Fill each cupcake liner 2/3 of the way full with the batter.
  6. Bake at 350 for 14-16 minutes, until a toothpick inserted in the middle of a cupcake comes out clean.
  7. Allow to cool completely before attempting to remove from the muffin pan.

To make the frosting:

  1. Beat together the softened butter and cream cheese in the bowl of a stand mixer.
  2. Mix in the vanilla extract and salt.
  3. Add the powdered sugar one cup at a time, mixing until smooth and stiff peaks form.
  4. Scoop frosting into a piping bag with a large star tip. Pipe a dollop of frosting on top of each cooled cucpake.
  5. Sprinkle with pumpkin pie spice or cinnamon for garnish.
