Ingredients
- 12 count hawaiian rolls
- 8 ounces cream cheese softened
- 3/4 cup sugar divided
- 2 teaspoons vanilla extract divided
- 3 eggs
- 1/2 cup heavy cream
- 1 cup pumpkin puree
- 1 teaspoon pumpkin spice

- 1/4 cup butter softened
- 1/2 cup brown sugar
- 1/2 teaspoon pumpkin spice

Instructions
- In a large bowl, beat the eggs, heavy cream, pumpkin puree, pumpkin spice, 1/4 cup of sugar, and 1 teaspoon vanilla extract. Spread half the mixture along the bottom of a baking dish.
- Slice the Hawaiian rolls to create top and bottom buns. Place the bottom half in the baking dish and set the top half aside.
- In a medium bowl, beat the cream cheese, 1/2 cup sugar, and 1 teaspoon vanilla extract until smooth. Spread the mixture evenly over the bottom buns. Place the top half of the buns on top of the cream cheese.
- Pour the rest of the egg mixture over the top of the casserole.
- Stir together the butter, brown sugar, and pumpkin spice. Sprinkle the mixture over the top of the casserole.
- Cover the dish with foil and place in the refrigerator to soak for at least 1 hour or overnight.
- When ready to bake, preheat the oven to 350 degrees F.
- Bake covered for 35 minutes, then remove the cover and bake for 15 to 20 minutes until the center is set and no longer jiggly. Allow to cool slightly before serving.
Notes
- Don't skimp on the soaking time. The bread needs time to absorb all that delicious pumpkin custard mixture. I recommend letting it soak for at least an hour but overnight is even better.
- Let it rest a few minutes before serving. Resting helps it set up and makes it easier to serve.
