These Pumpkin Pie Tacos are a fun and festive twist on a classic fall dessert. Crispy taco shells are filled with a creamy pumpkin pie filling, then topped with whipped cream and your favorite pie toppings.

Ingredients
- 8-10 flour tortillas (6-inch)
- 2 tablespoons melted butter (or cooking spray)
- ¼ cup granulated sugar
- 1 teaspoon ground cinnamon
- 1 (15 ounce) can pumpkin puree
- 1 (14 ounce) can sweetened condensed milk
- 1 teaspoon ground cinnamon
- ½ teaspoon ground ginger
- ¼ teaspoon ground cloves
- pinch of salt
- Whipped Cream
- Optional: Caramel sauce, chocolate sauce, chopped nuts, sprinkles, mini marshmallows
Instructions
- Prepare taco shells (if baking): Preheat oven to 375°F (190°C). Mix the sugar and cinnamon together. Brush each tortilla with melted butter (or spray with cooking spray) and sprinkle with the cinnamon-sugar mixture. Arrange the tortillas on a baking sheet, draped over the bars of an upside-down muffin tin or arranged in a taco shell baking rack. Bake for 10-12 minutes, or until crisp and golden brown. Let cool completely. Alternatively, you can use pre-made hard taco shells for a shortcut.
- Make pumpkin pie filling: In a large bowl, combine the pumpkin puree, sweetened condensed milk, cinnamon, ginger, cloves, and salt. Mix well until smooth and creamy.
- Chill filling: Cover the bowl and refrigerate for at least 30 minutes to allow the filling to thicken slightly.
- Assemble tacos: Fill each taco shell with the chilled pumpkin pie filling.
- Top and serve: Top the tacos with whipped cream and your favorite toppings, such as caramel sauce, chocolate sauce, chopped nuts, sprinkles, or mini marshmallows. Serve immediately.
Notes
- Taco Shells: You can use flour or corn tortillas for the taco shells. Baking them gives them a nice crispness, but you can also use pre-made hard taco shells for convenience.
