Pumpkin Spice Latte

Ingredients

  • 2 tablespoons pumpkin puree
  • 1/2 teaspoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1 tablespoon maple syrup
  • 1 1/2 cups whole milk
  • 1-2 hots espresso or strong coffee
  • Whipped Cream

Instructions

  1. Place first 4 ingredients in a medium saucepan and whisk to combine. 
  2. Place the saucepan over medium heat and slowly whisk in the milk to combine. Bring pumpkin milk mixture just to a boil.
  3. Pour the mixture into a blender and whiz on low to medium for 30 seconds or until frothy.
  4. Pour 1/4 cup coffee into each mug and top with half of the pumpkin milk mixture.
  5. Top with whipped cream and a sprinkle of pumpkin pie spice. 

Notes

  • To make the recipe vegan or dairy free you can use almond or other plant based milk and top with coconut whipped cream.
