Quick Chicken and Broccoli Alfredo

  • 8 ounces rotini pasta
  • 12 ounces broccoli florets chopped
  • 2 tablespoons oil
  • 1 pound boneless skinless chicken breasts cut into thin diagonal slices
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 cup chicken broth
  • 1 cup whole milk or more, as needed
  • ¼ cup heavy cream
  • ¼ teaspoon garlic powder
  • ½ teaspoon Italian seasoning
  • ½ cup freshly grated parmesan divided

Instructions

  1. In a large pot of boiling salted water, cook the pasta according to package directions. In the final 3 minutes of cooking, add the broccoli florets to the pasta and cook for the remaining time. Drain and set aside. 
  2. In a large 12-inch skillet, heat the oil, over medium-high heat. Add chicken to skillet and cook for 2 mintues or until the bottoms are browned. Flip and cook for an additional 2 minutes or until the chicken reaches an internal temperature of 165F. 
  3. Remove the chicken from the skillet and set it aside on a plate. 
  4. Melt the butter in the skillet over medium heat. Add the flour and whisk until lightly browned, about 1 minute. 
  5. Gradually add the chicken broth and milk, whisking constantly, until incorporated. Stir in heavy cream, garlic powder, and Italian Seasoning until slightly thickened, about 1-2 minutes.
  6. Add ⅓ cup Parmesan and stir to combine with the sauce. Cook for an additional minute or until the sauce is smooth. If the mixture is too thick, add more milk as needed.
  7. Add the pasta, broccoli and chicken to the sauce and stir to combine. Serve and sprinkle with additional Parmesan cheese.
