Ingredients
- ¼ cup lime juice
- 2 tablespoons olive oil divided
- ¼ cup chopped fresh cilantro
- ½ teaspoon ground cumin
- 1 small garlic clove grated
- ¼ teaspoon salt
- 1 ½-2 lbs boneless chicken breasts

Instructions
Make the marinade:
- Add lime juice, 1 tablespoon olive oil, chopped cilantro, cumin, garlic, salt, and chicken breasts to a large zip bag.
- Let chicken marinate for 15-20 minutes in the fridge.
Cook the chicken:
- In a large skillet over medium-high heat, heat up the remaining olive oil.
- Place the chicken breasts on a skillet and cook, for 5-7 minutes on each side, until the chicken is cooked through at an internal temperature of 165F. Discard chicken marinade.
- Remove the chicken and let it rest 5 to 10 minutes before slicing and serving.
Notes
- This recipe yields enough marinade for to 2 lbs of chicken.
