Ingredients
- 1 cup uncooked quinoa
- ¼ cup parsley chopped
- ½ red onion finely diced
- 1 cup feta cheese
- 1 8.5 oz jar California Sun Dry Brand julienne-cut sun dried tomatoes drained, rinsed, and dried
- 1 15 oz can chickpeas drained and rinsed
- 1 ½ avocado pitted and cubed
Dressing
- ⅓ cup olive oil
- ¼ cup lemon juice
- 3 tbsp red wine vinegar

- ½ tsp garlic powder
- ½-1 tsp sea salt depending on taste

- Cook the quinoa according to the directions on the package. Allow to cool.
- Combine the dressing ingredients in a separate bowl or jar.
