  • 1 cup orange juice
  • ¼ cup honey see notes
  • 1 bottle sparkling wine

Instructions

  1. Place the raspberries, orange juice, and (if using) honey into your blender and blend on medium speed until the raspberries have broken down.
  2. Strain the juice through a fine-mesh sieve, pressing on the pulp to squeeze out the juice.
  3. Add ¼ cup of the raspberry juice to a flute glass then carefully fill the glass with sparkling wine. It will foam a lot so go slowly and pour against the side of the glass. Add a few raspberries to the glass to garnish.

Notes

  • Add honey if you prefer a sweeter drink; omit for a drier flavor.
  • This recipe yields about 2 cups of raspberry juice, sufficient for approximately 8 mimosas based on flute size.
  • More than one bottle of sparkling wine may be needed depending on the glass size.
  • For sugared rims, dip glass rim in water then sugar before adding the drink.
