Ravioli Soup

Ravioli Soup is a hearty and flavorful dish that combines ground beef, Italian sausage, marinara sauce, crushed tomatoes, and a variety of cheeses with cheese-filled ravioli. Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1 medium yellow onion diced (about 1 cup
  • ½ pound ground beef
  • ½ pound Italian sausage ground
  • 1 tablespoon garlic minced
  • 1 tablespoon Italian seasoning
  • 2 teaspoons kosher salt
  • 2 teaspoons black pepper ground
  • 1 jar marinara sauce 24 ounces
  • 4 cups beef broth 32 ounces
  • 1 can crushed tomatoes 28 ounces
  • 1 bag cheese ravioli frozen, 25 ounces
  • ½ cup heavy cream
  • 1 cup mozzarella cheese shredded
  • ½ cup Romano cheese shredded, 40 g
  • ½ cup Parmesan Cheese shredded, plus more for garnish
  • parsley chopped, for garnish, fresh

Instructions

  1. To a large pot over medium heat, add oil.
  2. When the oil is hot, add onions, ground beef, Italian sausage, and garlic. Cook, stirring occasionally, breaking up the meat as you go, until the meat is no longer pink (8-10 minutes). Drain excess grease if necessary.
  3. Add Italian seasoning, salt, and pepper.
  4. Pour in marinara sauce, beef broth, and crushed tomatoes. Stir to combine and bring the soup to a simmer.
  5. Once simmering, add ravioli and cook for 4-6 minutes, or until done, gently stirring occasionally to avoid breaking the ravioli.
  6. Reduce heat to low. Add in heavy cream, mozzarella cheese, romano cheese, and parmesan, stirring until the cheeses are fully melted.
  7. Garnish with parsley and parmesan cheese as desired. Enjoy!
