Red Cappuccino - Rooibos tea cappuccino
Description
Red Cappuccino combines freshly brewed Rooibos tea prepared as a concentrated "espresso" with warmed, frothed milk poured over it. The Rooibos tea is steeped strongly by using multiple teabags or a generous amount of loose leaf in boiling water, then mixed with gently heated milk that has been frothed to increase volume and create a light foam. Cinnamon and sweetener can optionally be added for extra aroma and sweetness.
The resulting drink has a rich, smooth mouthfeel from the frothed milk balanced by the slightly sweet, earthy flavors of Rooibos tea. Preparing the milk around 68℃ helps achieve optimal frothing without scalding. The beverage is assembled at a 50/50 ratio of tea to milk, poured carefully to preserve the foam atop.
This Red Cappuccino suits those seeking a comforting hot drink without caffeine or coffee flavors. It can be enjoyed alongside breakfast or as an afternoon treat. Optional cinnamon adds a warm spice note.
Ingredients
- 250 millilitre water boiling
- 4 rooibos tea or 4 heaped teaspoons of loose-leaf Rooibos, teabags
- 250 millilitre semi-skimmed milk or full fat milk
- ground cinnamon optional, for sprinkling
- sweetener optional, choice like honey, sugar etc
Instructions
Make the Rooibos 'espresso'
- Boil the water for the Red Cappuccino. Pour 125ml of water into each mug. You can also do this step with a teapot first.
- Place the teabags in the boiled water (2 x teabags per mug), or in the teapot. If using loose-leaf, brew the tea in a teapot as you normally would and strain into the mugs when ready.
- Give the tea a stir and let it steep for a good 4 minutes, or until you have a very strong, dark tea.
Froth the milk
- In the meantime, heat the milk. Don't boil it. The ideal temperature would be around 68℃/150℉. This will give you the best froth.

Assemble
- Remove the teabags from the mugs. If using a teapot, strain the tea into the mugs. We are using a 50/50 ratio of tea to milk, so don't go over the halfway line in the mugs to allow enough room for the milk.
- Slowly pour the milk onto the tea and scoop any leftover foam on top. Sprinkle with cinnamon if you wish and serve with your desired sweetener.
