Roasted Cauliflower & Truffle soup
Description
Roasted Cauliflower & Truffle Soup uses whole cauliflower heads roasted until slightly caramelized to bring out a richer flavor. The soup base is built by sautéing leeks and garlic in butter, then simmering with the roasted cauliflower, stock, and whole milk. Half of the mixture is pureed for a smooth, creamy texture, and the rest is incorporated in chunks to give body and bite.
The soup balances the natural sweetness of roasted cauliflower with savory notes from leeks and garlic, while a drizzle of truffle oil and optional bacon lardons add an earthy and smoky finish. The gentle roasting and simmering create a velvety and subtly complex soup without heavy cream.
This soup makes a refined yet approachable starter or light meal and can be served with crusty bread for dipping. The combination of roasted vegetables and truffle oil provides a rich mouthfeel and layered flavor.
Ingredients
- 2 cauliflower approximately 600g, florets removed, heads
- 2 tablespoons olive oil
- sea salt flaked, generous pinch

- 1 tablespoon butter
- 2 leek cleaned thoroughly and thinly sliced
- 2 garlic crushed, cloves
- 1 l stock
- 500 ml whole milk

Instructions
- Preheat the oven to 180°c.
- Place the cauliflower on a roasting tray and drizzle with olive oil, season with the salt.
- Put the tray in the oven and allow to roast for 30 minutes until the cauliflower is cooked and caramelised slightly.
- Remove and set aside.
- In a large pot, melt the butter and fry the leeks until soft.
- Add the garlic and cauliflower to the pot and pour in the stock and milk.
- Allow to simmer gently for 10 minutes then remove half of the cauliflower and blend the remaining soup.
- Break the larger cauliflower florets up a little then stir back into the blended soup.
- Season with salt & pepper and serve with a drizzle of truffle oil and bacon lardons.
