Roasted Cauliflower & Truffle soup

Roasted Cauliflower & Truffle Soup combines caramelized cauliflower with leeks and garlic, blended with stock and milk for a creamy texture. The roasting intensifies the cauliflower's flavor, while the truffle oil and optional bacon lardons add depth and a touch of earthiness. A portion of the cauliflower is left in chunks for added texture, making the soup both smooth and satisfying. This soup works well as a comforting starter or light meal, especially in cooler weather.

Description

Roasted Cauliflower & Truffle Soup uses whole cauliflower heads roasted until slightly caramelized to bring out a richer flavor. The soup base is built by sautéing leeks and garlic in butter, then simmering with the roasted cauliflower, stock, and whole milk. Half of the mixture is pureed for a smooth, creamy texture, and the rest is incorporated in chunks to give body and bite.

The soup balances the natural sweetness of roasted cauliflower with savory notes from leeks and garlic, while a drizzle of truffle oil and optional bacon lardons add an earthy and smoky finish. The gentle roasting and simmering create a velvety and subtly complex soup without heavy cream.

This soup makes a refined yet approachable starter or light meal and can be served with crusty bread for dipping. The combination of roasted vegetables and truffle oil provides a rich mouthfeel and layered flavor.
