Rosé Lemonade
Description
This Rosé Lemonade starts by making or preparing simple syrup to add sweetness. Fresh lemons are prepared by slicing some into wheels for garnish and juicing others to yield one cup of strained lemon juice. These are combined with the cooled simple syrup, rosé wine, and water in a pitcher. The mixture chills in the refrigerator to meld flavors.
The drink is served over ice either straight or topped with club soda for fizz. Lemon wheels add a visual accent and subtle citrus aroma. Opting for dry rosé wines balances the sweetness and acidity for a crisp cocktail.
Serving the Rosé Lemonade chilled makes it a pleasant complement to light meals or social occasions. It can be prepared up to a day in advance, with ice and club soda added just before serving. Leftover lemons' zest can be saved for other uses like homemade limoncello.
Ingredients
- 3/4 cup simple syrup store bought or homemade
- 10 lemon plural
- 1 rosé wine see headnotes, 750 milliliter bottle
- club soda optional
Instructions
- Make a simple syrup: If you’re using store bought simple syrup skip this step. To make simple syrup at home: In a small saucepan set over medium-high heat, combine 3/4 cup granulated sugar and 3/4 cup water. Stir until the sugar is dissolved and the color changes from gray to clear. Set aside to cool to room temperature.
- Prep the lemons: While the simple syrup cools, scrub one lemon and slice into wheels. Juice enough of the remaining lemons to yield 1 cup of juice. Use a sieve to strain out any pulp.
- Mix: In a large pitcher, stir together the cooled simple syrup, lemon juice, 2 cups of water, and rosé wine. Add in the reserved lemon wheels and set in your refrigerator until you’re ready to serve.
- Serve: If you’re using club soda, fill 6-8 iced tea glasses with ice and divide the cocktail amongst the glasses, leaving about 2-inches of room at the top. Top with club soda. Or, ladle the mixture into ice-filled wine glasses. If you have any lemons left over, you can garnish with additional lemon wheels if desired. Cheers!
