Ingredients
- 1 (11-ounce) box of vanilla wafers
- 1 ¼ cup powdered sugar
- 2 ½ tablespoons cocoa powder
- 1 pinch salt
- 2 tablespoons light corn syrup
- ½ cup spiced rum
- Powdered sugar, for rolling
- Cocoa powder, for rolling
Instructions
- Add the 1 (11-ounce) box of vanilla wafers to a food processor and pulse until you have crumbs.
- Add 1 ¼ cup powdered sugar, 2 ½ tablespoons cocoa powder, 1 pinch salt, and 2 tablespoons light corn syrup. Pulse until combined.
- Add ½ cup spiced rum and mix until combined. The dough should come together if pinched and formed into a ball and should not fall apart.
- Scoop out tablespoons of dough and roll into balls. To coat the balls, add powdered sugar, or cocoa powder, in a small sheet pan or pie dish. Add the balls and shake gently until completely coated.
- If desired, place the finished balls in mini cupcake liners. Store in an airtight container until you are ready to serve them.
