Salted Caramel Chocolate Covered Crackers

Make these Chocolate-Covered Ritz Crackers to impress your party guests. They are a tasty cracker sandwich filled with caramel and covered in rich chocolate.

Ingredients

  • 48 salted round butter crackers
  • ½ cup dulce de Leche canned or jarred
  • 4 oz chocolate chips or ½ cup milk, dark or semi-sweet
  • 4 oz melting chocolate wafers or chopped melted chocolate bar
  • coarse sea salt

Instructions

  1. Spread out 12 crackers, salted side down, on a parchment lined cookie sheet or cutting board.
  2. Place 1 teaspoon of the dulce de leche on each cracker.
  3. Place another cracker on top of the caramel, pressing down and rotating to distribute the caramel evenly.
  4. Transfer to the fridge for at least 30 minutes.
  5. In a double broiler, melt the chocolate chips and melting wafers until smooth or in a microwave safe bowl melt chocolate in 20 second intervals, stirring in between each interval until smooth.
  6. Dip each cracker in the chocolate, coating completely then transfer back to the cookie sheet or cutting board.
  7. Before the chocolate sets, top with coarse salt.
  8. If desired, you can do an additional drizzle of chocolate on top for visual interest and variation.
  9. Allow the chocolate to set before serving.

Notes

  • Decorate them for a holiday or special occasion: Use different colored melted candy wafers to drizzle on the crackers, such as red and green for Christmas. You can also try themed sprinkles for Halloween or Easter.. They are the perfect treat any time!
  • Set them in the freezer: If you would like them to set faster, place them in the freezer. Around 15-20 minutes should do the trick.
  • Use coconut oil: Stir in a teaspoon of coconut oil to thin the melted chocolate, making it smoother and easier to dip.
