Ingredients

  • 1 cup unsalted butter softened
  • ¾ cup canola oil
  • 1 ¼ cups light brown sugar
  • 1 cup powdered sugar
  • 2 teaspoons pure vanilla extract
  • 2 tablespoons cold water
  • 2 large eggs
  • 6 cups flour
  • 1 teaspoon kosher salt
  • ½ teaspoon baking soda
  • ½ teaspoon cream of tartar

Caramel icing

  • 2 tablespoons unsalted butter softened
  • 3 tablespoons whole milk
  • ½ cup light brown sugar packed
  • 1 cup powdered sugar
  • ¼ teaspoon kosher salt
  • 1 teaspoon pure vanilla extract

Instructions

  1. Preheat oven to 350 degrees and line two cookie sheets with parchment paper.
  2. Using a large bowl, beat together the butter, oil, sugars, water and vanilla until combined and smooth.
  3. Beat in the eggs one at a time until combined.
  4. Using a large bowl, whisk together the flour, salt, baking soda and cream of tartar.
  5. Gradually beat in the dry ingredient into the wet ingredients until a soft dough forms.
  6. Using a mini ice cream scooper, scoop out some dough and roll it into a ball and place onto the cookie sheet.
  7. Using a flat bottom of a glass, lightly press the dough ball into a thick disk.
  8. Using the back of a spoon, make a indent into the cookie.
  9. Repeat steps for more cookies.
  10. Place into the oven and bake for 8 minutes.
  11. Allow to cool.

Icing

  1. Using a large bowl, beat the butter, milk, sugars, vanilla and salt until combined and smooth.
  2. Fill in the center of the cookies and allow icing to harden.
  3. Enjoy!
