  • 1 cup butter room temperature
  • 1 cup granulated sugar
  • 1 cup brown sugar packed
  • 2 eggs
  • 1 tablespoon vanilla extract
  • 2 ½ cups rolled oats finely ground*
  • 2 cups all purpose flour
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 cups semi-sweet chocolate chips
  • 1 cup chopped walnuts optional

Instructions

  1. Preheat oven to 350 degrees F and line a baking tray with parchment paper or a nonstick mat. Set aside.
  2. Cream butter, sugars, eggs and vanilla together until very smooth and fluffy.
  3. In a separate bowl, mix together ground oats, flour, salt, baking powder, and baking soda.
  4. Stir butter mixture into flour/oatmeal mixture until well combined.
  5. Add chocolate chips and walnuts and stir until well combined - it will be thick and you might have to use your hands..
  6. Roll dough into 2 inch size balls and bake for 8-10 minutes - don't overbake! Let rest for 1-2 minutes then remove to a cooling rack.

Notes

  • *Measure out 2 1/2 cups whole oats then grind them in your food processor
