Description

  • 2 pounds Shrimp peeled and deveined, medium
  • 3 tablespoons cilantro fresh, chopped leaves

For serving

  • tortillas flour or corn
  • cabbage shredded
  • avocado sliced
  • jalapeño sliced
  • queso fresco crumbled
  • hot sauce

Instructions

  1. Preheat oven to 400 degrees F. Lightly oil a baking sheet or coat with nonstick spray.
  2. In a medium bowl, whisk together butter, garlic, lime juice, chili powder, paprika, cumin, 1 teaspoon salt, and 1/2 teaspoon pepper.
  3. Place shrimp in a single layer onto the prepared baking sheet. Stir in butter mixture and gently toss to combine.
  4. Place into oven and bake just until pink, firm and cooked through, about 8-10 minutes. Stir in cilantro.
  5. Serve immediately in tortillas with desired toppings.
