Instructions
Step No.1: Cook the Beef
- In a large pot, heat olive oil over medium heat. Add ground beef and cook until browned, breaking it apart with a spoon. Drain excess fat.
Step No.2: Sauté the Vegetables
- Add onion, garlic, and carrots to the pot. Cook for 3-4 minutes until softened. Stir in tomato paste and Worcestershire sauce and cook for 1 more minute.
Step No.3: Simmer the Soup
- Pour in beef broth, then add salt, pepper, thyme, rosemary, and smoked paprika. Bring to a gentle simmer and cook for 15 minutes. Add peas and corn, then stir in heavy cream.
Step No.4: Make the Mashed Potatoes
- Meanwhile, boil potatoes in a separate pot until fork-tender, about 10-12 minutes. Drain and mash with butter, milk, salt, and pepper until smooth. Stir in cheese if using.
