Ingredients

  • 1 lb potato cut into 1-2" pieces
  • 3 Tablespoons neutral cooking oil as needed, generic cooking oil
  • salt to taste
  • black pepper to taste
  • 1 lb ground beef
  • 2 talks celery diced
  • 2 carrot peeled and diced
  • 1 onion diced
  • 3 Cloves garlic minced
  • 2 Tablespoons flour or cornstarch
  • 1 Tablespoon thyme
  • 4 cups beef broth or more as desired
  • 1 Tablespoon Worcestershire sauce

Instructions

  1. Preheat oven to 450°F and line a baking sheet with parchment paper or a silicone baking mat.
  2. Chop potatoes into 1-2" pieces and place on the prepared pan. Drizzle with 2 Tablespoons of olive oil, toss to coat, and then season with salt and pepper to your preference.
  3. Roast the potatoes for 25-30 minutes, turning halfway through, as you prepare the stew.
  4. Place remaining oil in a stockpot or dutch oven over medium heat. Once oil is hot, add the ground beef and season with salt and pepper.
  5. Cook until ground beef is well-browned (about 4 minutes or so) then add the diced onions, carrots and celery to the pot. Continue cooking for about 4 more minutes, until the onions are soft.
  6. Stir in the garlic and cook 1 minute, then stir in the flour and thyme. Stir well, cooking for a couple more minutes, so that the flour coats all the meat and vegetables.
  7. Pour in the beef broth and add Worcestershire sauce. Increase heat and bring the stew to a boil.
  8. Once boiling, reduce heat to medium-low and cook for 10 more minutes, until stew thickens and vegetables become tender. Stir in roasted potatoes and season to taste.
