Shrimp Cakes
- 1 lb raw shrimp see note #1
- 2 eggs
- 1 lime juice of + zest
- 3 tbsp Panko bread crumbs
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/2 tsp garlic powder
- 1 small onion finely chopped
- 2 tbsp olive oil
Zesty avocado dipping sauce
- 1 pack Simply Avocado
- 1 lime juice + zest
- 1/4 tsp salt
- 1/2 tsp onion powder
- 2 tbsp parsley chopped

Instructions
Shrimp Cakes
- Clean and peel the shrimps. Place them in a food processor and pulse 4 or 5 times until they are chopped into small pieces but are not mushy. Transfer them to a bowl.
- To the shrimp, add eggs, lime zest and juice, panko bread crumbs, paprika, salt, garlic powder and onion.
- Mix well until all ingredients are well combined.
- Heat olive oil in a pan and shape the shrimp mixture into small patties, about 2 1/2 inch wide. Place them in the pan and sear for four to five minutes on each side.
- Serve with zesty avocado dipping sauce.
Zesty avocado dipping sauce
- Mix all the ingredients in a bowl. Refrigerate for 15 minutes and then serve with shrimp cakes.
Notes
- Make sure you're using raw shrimps for this recipe. If you accidentally got frozen cooked shrimps, saute onion and garlic as well, then mix all the ingredients. Cook the shrimp patties for shorter time to prevent the shrimps from getting rubbery.
- Make sure you only pulse the shrimps in the food processor a few times or else the shrimp will release water and becomes mushy.
- Don't overcook the patties. Overcooked shrimp will have a rubbery texture.
- To make sure the shrimp cakes are all one size, use an ice cream scoop to make the patties.
