Description
To make Shurpa Soup, lamb or beef cubes are sautéed with onions, then seasoned with paprika, black pepper, and salt. Water is added to create a broth, and the mixture simmers for an hour to develop deep flavors and tenderize the meat. Subsequently, diced carrots, tomatoes, and bell peppers are added and cooked further to infuse their flavors into the broth.
Finally, diced potatoes, pressed garlic, and fresh parsley are introduced, and the soup simmers until the potatoes become tender and the garlic aroma is absorbed. The resulting soup has a combination of savory meatiness, warm spices, and a range of vegetable textures from tender to soft, creating a comforting dish.

Ingredients
- 3 lbs lamb or beef
- 1 onion diced
- 2 cups carrot diced
- 1 bell pepper diced
- 2 cups tomato diced
- 8 potato diced into bite size, small
- 1/2 bn parsley diced, fresh
- 5 garlic cloves
- 1 tsp paprika
- 1 tbsp black pepper
- 1 tbsp salt adjust to taste
- 1 tbsp neutral cooking oil for frying, generic cooking oil
Instructions
- Preheat the oil in a large soup pot over medium heat. Saute the onions until they're golden brown.
- Slice the lamb or beef into 1-inch cubes. Next, brown the cubes on all sides until golden brown. Season generously with paprika, pepper, and salt.
- Add in 4 quarts of water and let the mixture simmer for 60 minutes.
- Add in the carrots, tomatoes, and bell peppers. Allow the soup to simmer for 20 more minutes.
- Add in the potatoes, pressed garlic, and fresh herbs. Allow the soup to simmer until the potatoes are fully cooked and easily pierced with a fork (about 15-20 minutes).
- Season to taste with salt if necessary. Enjoy!
