Ingredients
- 1 pound tilapia fillets boneless skinless, diced
- ½ pound bay scallops halved
- 12 lime large, juiced (about 1 ½ cups
- 2 Roma tomato seeded and diced
- 1 jalapeño seeded and thinly sliced
- ½ avocado diced
- ½ cup cucumber diced
- ¼ cup red onion diced
- 3 tablespoons cilantro minced
- salt to taste
- black pepper to taste
- lime wedges
- 10 to 12 tostada
- hot sauce
Instructions
- Place tilapia and scallops into a large mixing bowl and top with lime juice. Stir mixture to combine, cover with plastic wrap and refrigerate for about 30 minutes (and up to 12 hours).
- Remove mixture from the refrigerator and drain. Add remaining ingredients to the bowl and generously season with salt and pepper.
- Cover and refrigerate for an additional 30 minutes.
- Serve with extra lime wedges, hot sauce and tostadas.
