  • 50 ml gin 2 oz
  • 25 ml Cherry liqueur 1 oz
  • 25 ml lime juice 1 oz
  • 1 tbsp benedictine
  • 2 Angostura bitters dashes
  • soda water to top up, chilled
  • cocktail cherries to garnish, or lemon slices or pineapple wedges

Instructions

  1. Put all the ingredients apart from the soda water (or pineapple juice) in a mixing jug half filled with ice.
  2. Give a good stir then strain into a chilled tall glass filled with cubed ice.
  3. Top with soda water or pineapple juice.
  4. Garnish with a cocktail cherry, slice of lemon or a small wedge of pineapple. Add a straw and sip slowly – incredibly refreshing!

Notes

  • This cocktail can be prepared using a shaker, mixing jug, or directly in a chilled highball glass depending on convenience.
  • Variations include replacing soda water with chilled dry Prosecco or Champagne for a sparkling effect.
