Ingredients

Servings
  • 3 chicken breasts (1 ½ pounds)
  • 1 batch Easy Homemade Salsa
  • 1 ½ cups pepper jack cheese shredded
  • 2 tablespoons taco seasoning
  • 1 ½ tablespoons olive oil

Instructions

  1. Make the batch of salsa, then set it aside while you prepare the chicken.
  2. Slice each piece of chicken in half, making 6 thin chicken cutlets. I also like to pound them out with a meat mallet, so they are nice and even.
  3. Season both sides of the chicken with the taco seasoning.
  4. Heat a large oven-safe skillet to medium and add in the olive oil. Sear the chicken for 2 minutes on each side.
  5. Pour the salsa in the skillet, making sure the chicken is well coated. Turn the heat down to a simmer and partially cover with a lid.
  6. Preheat your oven to 450°F.
  7. Simmer until the chicken is cooked through, reaching an internal temperature of at least 165°F when checked with a meat thermometer.
  8. Add the shredded cheese over the tops of the chicken, then bake in the oven for 5-7 minutes or until the cheese has melted.

Notes

  • If you don't want to make your own salsa, you can certainly use store-bought, just be sure to choose one that is lower carbs.
