Skinny Fudge Swirled Cheesecake Brownies

Delicious fudgy cheesecake brownies that are lower in calories and absolutely delicious!

Ingredients

  • 8 ounces reduced-fat cream cheese
  • cup sugar
  • ½ teaspoon vanilla extract
  • 1 large egg

Brownie Layer:

  • 2 ounces coarsely chopped semisweet chocolate
  • 3 tablespoons unsalted butter
  • 2 tablespoons canola oil
  • 1 cup all-purpose flour
  • ½ cup unsweetened Dutch-process cocoa powder
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ¾ cup packed dark brown sugar
  • ¼ cup granulated sugar
  • ½ cup low-fat buttermilk
  • 2 large egg whites
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit. Line an 8x8-inch with aluminum foil and lightly spray with non-stick cooking spray.
  2. To make the cheesecake layer whisk the cream cheese until smooth and creamy for about one minute. whisk in the sugar and vanilla, then whisk in the egg until smooth.

Brownie Layer:

  1. Put the chocolate, butter, and oil into a microwave-safe bowl. microwave for 30 seconds at a time stirring between each until it is melted and smooth.
  2. In a large bowl whisk together flour, cocoa powder, baking powder, and salt. In a separate bowl add the brown sugar, sugar, buttermilk, egg whites, and vanilla. Whisk until the batter is thick and glossy.
  3. Slowly add the melted chocolate mixture to the sugar and buttermilk mixture and mix until incorporated.
  4. Gradually add the flour mixture and stir until incorporated. Reserve 1/2 cup of this brownie mixture and pour the rest into the bottom of the prepared pan.
  5. Pour the cheesecake mixture over the brownie layer. Drop large dollops of the reserved brownie mixture on top, and swirl with a knife or the bottom of a wooden spoon.
  6. Bake for 40-45 minutes until the top is just set. Let cool completely and cut into 2-inch squares.
