Description
The chicken is seasoned with salt and pepper, then slow-cooked with crushed tomatoes, onion, basil, oregano, parsley, and optional red pepper flakes. After four hours on low heat, the chicken is removed and shredded. Meanwhile, penne pasta is cooked separately and drained.
The shredded chicken and pasta are stirred back into the slow cooker, topped with mozzarella and Parmesan cheeses, and covered to melt the cheese over 10 to 20 minutes more. Ingredients
- 4 chicken breast boneless skinless
- salt Kosher salt and freshly ground
- black pepper Kosher salt and freshly ground
- 2 crushed tomatoes 28-ounce cans
- 1 onion diced
- 1 tablespoon basil dried
- 1 teaspoon oregano dried
- 1 teaspoon parsley dried
- ½ teaspoon red pepper flakes optional, crushed
- 1 pound penne pasta
- 1 ½ cups mozzarella cheese shredded
- ¼ cup Parmesan Cheese freshly grated
- 2 tablespoons parsley chopped fresh leaves
Instructions
- Season chicken with salt and pepper, to taste. Place chicken into a 6-qt slow cooker.
- In a large bowl, combine crushed tomatoes, onion, basil, oregano, parsley and red pepper flakes, if using. Stir into the slow cooker and gently toss to combine. Cover and cook on low heat for 4 hours.
- Remove chicken from the slow cooker and shred, using two forks.
- In a large pot of boiling salted water, cook pasta according to package instructions; drain well.
- Stir pasta and chicken into the slow cooker; top with cheeses. Cover and cook on low heat for an additional 10-20 minutes, or until the cheeses have melted.
- Serve immediately, garnished with parsley, if desired.
