Slow Cooker Italian Chicken and Potatoes is such an easy meal to make but packed with such amazing flavor! The entire family will love this hearty meal in one.

Ingredients
- 1½ pounds boneless skinless chicken breasts
- 3 cups chopped 1 1/2 inch potatoes
- 3 tablespoons oil
- 1 tablespoon Italian seasoning
- 1 teaspoon garlic powder
- salt and pepper to taste
- fresh herbs for garnish optional
Instructions
- In a large bowl combine 1½ pounds boneless skinless chicken breasts and 3 cups chopped 1 1/2 inch potatoes. Drizzle with 3 tablespoons oil and stir to coat. Sprinkle 1 tablespoon italian seasoning, 1 teaspoon garlic powder, and salt and pepper to taste, then toss to coat well.
- Transfer to 6 quart slow cooker. Cover and cook on low for 4-6 hours until chicken is cooked through and potatoes are fork tender.
- Sprinkle fresh herbs for garnish, like oregano, and thyme, and serve.
