Ingredients
- 2 pounds boneless skinless chicken breasts
- ½ cup (127.5 g) low sodium soy sauce
- ½ cup (170 g) honey
- ¼ cup (64 g) hoisin sauce
- 1 tablespoon rice wine vinegar
- 2 teaspoons garlic, minced
- 1 teaspoon sesame oil
- ½ teaspoon ground ginger
- 3 green onions, thinly sliced
- 2 tablespoons water
- 1 tablespoon cornstarch
- 1 tablespoon sesame seeds
Instructions
- Place the chicken in the bowl of a slow cooker.
- In a medium bowl, whisk together the soy sauce, honey, hoisin sauce, vinegar, garlic, oil, ginger, and most of the green onions (reserving a few for garnish). Pour over the chicken.
- Cook on low for 3-4 hours (or high for 2-3 hours), or until the chicken reaches an internal temperature of 165°F. Cooking times may vary, depending on the size of the chicken breasts. Transfer the cooked chicken to a clean plate and tent loosely with aluminum foil. Let rest for 10 minutes.
- Transfer the liquid from the slow cooker to a small saucepan.
- In a small bowl, whisk 2 tablespoons of water with 1 tablespoon of cornstarch until smooth and creamy.
- Slowly add the cornstarch mixture to the sauce. Cook on high until thick, whisking constantly.
- Place the chicken back into the slow cooker. Pour the sauce over the chicken, tossing to coat.
- Garnish with reserved green onions and sesame seeds. Serve warm.
