Slow Cooker Honey Garlic Chicken and Veggies
Description
The Slow Cooker Honey Garlic Chicken and Veggies recipe combines hearty chicken thighs with fresh vegetables in a rich sauce made from soy, honey, garlic, and dried herbs. Cooking the ingredients together in a slow cooker for several hours allows the flavors to meld deeply, producing juicy chicken and tender potatoes and carrots. The green beans are added later to remain crisp and vibrant. The optional broiling step adds a golden, crispy finish to the chicken skin, contrasting the slow-cooked tenderness.
This dish serves as a complete meal, easy to prepare and suitable for a comforting family dinner. Its balanced components make it satisfying without requiring side dishes, and garnishing with fresh parsley adds brightness.
Ingredients
- 8 chicken thigh bone-in, skin-on
- 16 ounces red potatoes halved, baby
- 16 ounces carrot baby
- 16 ounces green beans trimmed
- 2 tablespoons parsley chopped fresh leaves
For the sauce
- ½ cup soy sauce reduced sodium
- ½ cup honey
- ¼ cup ketchup
- 2 cloves garlic minced
- 1 teaspoon basil dried
- ½ teaspoon oregano dried
- ¼ teaspoon red pepper flakes crushed
- ¼ teaspoon black pepper ground
Instructions
- In a large bowl, combine soy sauce, honey, ketchup, garlic, basil, oregano, red pepper flakes and pepper.
- Place chicken thighs, potatoes, carrots and soy sauce mixture into a 6-qt slow cooker. Cover and cook on low heat for 7-8 hours or high for 3-4 hours, basting every hour. Add green beans during the last 30 minutes of cooking time.
- OPTIONAL: Preheat oven to broil. Place chicken thighs onto a baking sheet, skin side up, and broil until crisp, about 3-4 minutes.
- Serve chicken immediately with potatoes, carrots and green beans, garnished with parsley, if desired.
