Slow Cooker Kielbasa and Potatoes

Slow Cooker Kielbasa and Potatoes is a hearty, one-pot meal combining diced frozen potatoes, sliced kielbasa, sharp cheddar, Monterey Jack cheeses, and a creamy blend of chicken soup and milk. The slow cooking melds the flavors while softening the potatoes and melding the cheesy sauce with the savory kielbasa, resulting in a comforting dish. Seasoned with chives, salt, pepper, and a touch of cayenne for mild heat, it requires minimal effort and perfect for filling family dinners.

Description

In this recipe, diced frozen potatoes and sliced kielbasa are combined with shredded cheddar and Monterey Jack cheeses, condensed cream of chicken soup, and milk, then seasoned with dried chives, kosher salt, black pepper, and cayenne pepper. Cooking together in a slow cooker allows the potatoes to fully cook and absorb the smoky, savory flavors of the kielbasa and creamy sauce.

The cheeses melt into the mixture, creating a rich, creamy texture that coats the potatoes and kielbasa pieces. The mild cayenne adds a gentle warmth without overpowering the dish. This slow-cooked casserole features tender potatoes softened through slow heat and flavorful sliced sausage pieces with slightly caramelized edges after cooking.

This dish suits casual dinners, offering a filling, cheesy, and savory meal that pairs well with a simple green salad or steamed vegetables to balance richness. Garnishing with fresh parsley adds color and a herbaceous note that lightens the creamy nature of the casserole.
