Description
Slow Cooker Mulled Wine infuses a bottle of red wine with warming spices and citrus in a crockpot. Sugar is dissolved in water first before adding freshly squeezed clementine juice and the remaining ingredients: brandy, cinnamon sticks, star anise, allspice berries, cloves, lightly crushed cardamom pods, vanilla bean, and freshly grated nutmeg. The mixture is heated until it simmers gently, then kept warm to allow flavors to meld over about 30 minutes.
The spices and fruit provide a fragrant backdrop to the red wine’s richness, balancing sweetness, spice, and acidity. You can serve it strained or with the spices in the drink for visual appeal. Garnishing with cinnamon sticks and star anise adds a festive touch.
For a holiday version, substitute cranberries and cranberry juice for clementines and add fresh rosemary sprigs both in the pot and as a garnish, complementing the tart fruit with an herbal note.
Making this ahead and reheating retains its flavor, making it practical for gatherings or quiet evenings alike.
Ingredients
Harvest Mulled Wine
- 750 ml red wine bottle
- 1/2 cup water
- 1/2 cup sugar
- 1/4 cup brandy
- 2 cinnamon stick
- 1 tsp allspice berries whole
- 4 star anise
- 1/2 tsp clove whole
- 5 cardamom pods lightly crushed with the back of a spoon to expose the seeds, whole
- 1/2 vanilla bean slit down the center (if you save pods this is a good time to reuse one)
- nutmeg about 1/4 tsp, fresh, good grating
- 8 clementines cut in half (remove any seeds)

Holiday Mulled Wine
- cranberry juice substitute for clementines, 1/2 cup each, fresh cranberries whole

Instructions
- Put the water and sugar in the crock pot and turn on high. Stir to dissolve the sugar. Juice 4 of the clementines and add to the pot.
- Add the rest of the ingredients and heat until the wine just gets to a simmer. Then turn the dial to the 'keep warm' setting and let it sit for about 30 minutes before serving.
- You can strain the wine before serving, or not.
- For the Holiday version, the process is the same, omit the clementines and use cranberries and rosemary.
Notes
- Whole spices do not need doubling if the recipe quantity is doubled; keep spice amounts the same.
- Prepare mulled wine a day in advance, refrigerate, and reheat before serving for best flavor development.
- Straining the spices before serving is optional; both ways work well.
- Add fresh orange slices when reheating for added citrus aroma and flavor.
