Slow Cooker Spicy Taco Potatoes
Description
Slow Cooker Spicy Taco Potatoes combine quartered red potatoes with taco seasoning, olive oil, butter, and a kick of red pepper flakes. Placed in a greased slow cooker, the potatoes cook slowly on high for several hours. Stirring every hour helps to evenly coat the potatoes as they soften to fork-tender perfection. The fat from butter and oil helps distribute the taco seasoning and spices, allowing the potatoes to absorb those flavors throughout the slow cook.
The result is tender potatoes with a spicy, savory seasoning profile characteristic of taco flavors, including a balance of earthiness and heat. This slow cooking technique allows maximum flavor penetration and effortless preparation since it requires minimal hands-on time. The dish can be served hot as a side to Mexican-inspired meals or as a hearty snack on its own.
Ingredients
- 3 pounds potato quartered, red
- 1 oz taco seasoning packet
- 2 tablespoons olive oil
- 2 tablespoons butter salted
- 1 tablespoon red pepper flakes
- salt to taste
- black pepper to taste
Instructions
- Spray a large slow cooker with nonstick spray.
- Combine all of the ingredients in a slow cooker. Stir to combine briefly (while the potatoes are still cold not everything will be coated, but it will as they cook and you stir later)
- Cook on high 3-4 hours, stirring every hour if possible. Check after 3 hours to see if they are done. When the potatoes are fork tender, they're done!
- Serve hot, enjoy!
