Sweet Salsa Pulled Pork
- 3-5 pound boneless pork butt roast
- 2 tablespoons minced garlic about 6 cloves
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 (16 ounce jar) salsa
- 1 cup brown sugar
- 1 tablespoon ground cumin optional
For Serving
- 12 (6-inch) flour tortillas or corn
- 1/2 cup chopped fresh cilantro
- 2 medium roma tomatoes diced
- 1/2 medium red onion diced
- 1/2 cup Crumbled queso fresco

Instructions
- Place a 3-5 pound boneless pork butt roast into a 6-quart slow cooker.
- Rub the pork with 2 tablespoons minced garlic, 2 teaspoons salt, and 1 teaspoon black pepper.
- Place the lid on the slow cooker and cook on low for 6 hours.
- Remove at least half of the grease and juices.
- In a small bowl, stir a 1 (16 ounce jar) salsa with 1 cup brown sugar and 1 tablespoon ground cumin until combined. Pour over the pork and return the lid to the slow cooker. Cook for another 1-2 hours until the pork shreds easily with a fork.
- Serve on warmed tortillas and top with desired toppings.
