Instructions

  1. Set smoker temperature to 200–225°F (93–107°C).
  2. Place 8 ounces cream cheese in a greased, small oven-safe baking dish or small cast iron skillet.
  3. Score the top of the cream cheese with a sharp knife to create a crosshatch pattern. This increases surface area for better smoke absorption and seasoning adherence.
  4. Drizzle 1 teaspoon olive oil evenly over the top of the scored cream cheese.
  5. In a small bowl, combine 1 1/2 teaspoons paprika, 3/4 teaspoon onion powder, 3/4 teaspoon garlic powder, 3/4 teaspoon ground mustard, 1/2 teaspoon dried rosemary, 1/2 teaspoon dried basil, 1/2 teaspoon salt, and 1/2 teaspoon crushed red pepper flakes. Stir until evenly blended.
  6. Sprinkle the seasoning mixture generously over the top and sides of the cream cheese.
  7. Transfer the dish to the smoker. Smoke for 1 hour and 30 minutes, or until the cream cheese is lightly golden, slightly puffed, and has visible smoke coloration.
  8. Remove from the smoker and serve immediately. Best served warm with crackers, pretzels, or sliced baguette.

Notes

  • Switch up the flavor and use 2 tablespoons of your favorite BBQ rub or seasoning blend in place of the seasonings listed. Try taco seasoning, everything bagel seasoning, Cajun seasoning, or Greek seasoning.
  • Try a sweet version with a cinnamon-sugar mix or pumpkin pie spice and serve it with graham crackers and apple slices. It’s a choose-your-own-adventure kind of snack.
