Ingredients
- 6 cups chicken broth
- 6 large Russet potatoes peeled and cut into bite-size pieces
- 1/2 cup butter
- 4 ounces cream cheese
- 1 teaspoon salt
- 1/2 teaspoon white pepper
- 2 cups shredded smoked gouda cheese
Instructions
- In a large pot, bring 6 cups chicken broth to a boil over high heat.
- While waiting for the broth to boil, peel and rinse 6 large russet potatoes. Cut them into bite-size pieces.
- Carefully add the potato pieces to the boiling chicken broth. If the broth doesn't fully cover the potatoes, add enough water to submerge them. Once the broth returns to a boil, reduce the heat to medium-low. Simmer for 10-15 minutes, or until the potatoes are soft and easily pierced with a fork.
- Drain the potatoes and return them to the pot. Add 1/2 cup butter, 4 ounces cream cheese, 1 teaspoon salt, and 1/2 teaspoon white pepper. Mash the potatoes using a potato masher or hand mixer until smooth and all ingredients are fully combined.
- Stir in 2 cups shredded smoked gouda cheese, mixing until the cheese is completely melted and integrated into the mashed potatoes.
- Serve the mashed potatoes hot.
Notes
- To keep the mashed potatoes warm for a large meal, transfer them to a slow cooker set to low heat. They can stay warm for 1 to 2 hours.
