Smoked Guacamole

This easy smoked guacamole recipe is perfect to serve up as a fun and flavorful dip for parties or for dinner on all your Mexican favorites. The smoker adds a special layer of flavor making this dip exceptional.

Ingredients
- 2 large limes juiced (¼ cup)
- 3 cloves garlic smashed or minced
- 2 jalapeños diced and seeded
- 6 avocados ripe
- 2 roma tomatoes diced
- 1 cup red onion diced
- 1 small bunch fresh cilantro chopped (about 3 tbsp)
- 1 teaspoon sea salt
- ½ teaspoon pepper

Instructions
- Gather together and measure your ingredients.
- Set smoker to 180° and preheat with lid closed for 15 minutes.
- Prep all the ingredients. Slice avocados in half and remove the pit. Slice jalapeños in half and remove the seeds. Coarsely chop garlic cloves. Dice red onions and tomatoes. Juice the limes.
- Pour lime juice into a shallow baking dish or foil sheet pan.
- Add in the garlic.
- Place juice into the smoker along with the jalaapeno halves placed cut side up directly onto the grill grates. Smoke for 30 minutes.
- After the lime juice and jalapeños have been smoking for 15 minutes, place the avocados directly onto the grill grates cut side up. Smoke for 15 minutes.
- Remove avocados, jalapeños, and lime juice from the grill and let cool for 10 minutes.
- Finely mince jalapeños
- Peel avocados and add into a large bowl.
- Mash the avocados.
- Next, add in all the remaining ingredients.
- Stir to combine.
- Serve with tortilla chips.
- Enjoy every bite!
Notes
- Expert Tips:
- Use a shallow, wide dish to cook the lime juice in the smoker. Having a large surface area allows more smoke to penetrate the lime juice giving it a smokier flavor. Just be sure the liquid is at least one-half inch deep.
- Use fresh lime juice.
- Leave the avocados in their skin in the smoker. Place them in with the skin side touching the grates.
- Be careful handling the jalapenos. If possible use gloves to prevent the transfer of spicy juices or oils that may linger on your hands. Use a spoon to scrape the seeds out of the jalapenos to avoid touching them.
- Preheat the smoker for at least 15 minutes prior to starting cooking.
