Smothered Beef Burritos

Smothered Beef Burritos are a cheesy and easy weeknight meal perfect for quick assembly, freezing or making ahead. Loaded with ground beef, vegetables, enchilada sauce and cheese!

Beef Burritos:

  • 1 ½ cups cheddar cheese divided, Sargento Reserve Series, shredded, 18-month aged
  • 1 tablespoon vegetable oil
  • 1- pound ground beef
  • ½ cup white onion , chopped
  • ½ cup bell pepper , chopped
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper ground
  • ½ teaspoon chili powder
  • 8 flour tortilla large
  • 1 cup enchilada sauce

Toppings:

  • tomato fresh
  • avocado
  • cilantro
  • jalapeños
  • sour cream
  • crema mexicana
  • corn
  • iceberg lettuce shredded
  • beans
  • green chiles
  • hot sauce

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Heat vegetable oil in large frying pan over medium heat. Add chopped onion and bell pepper, toss to coat in oil.
  3. Crumble and add ground beef, breaking apart as it cooks. Cook for approximately 8-10 minutes.
  4. Drain in a colander or use a slotted spoon to transfer mixture to a paper towel lined plate.
  5. Spray a casserole or baking dish with cooking spray.
  6. Ground beef mixture will be divided into 6 large burritos. Roll ground beef with a sprinkle of cheddar cheese in each large flour tortilla.
  7. Place into baking dish, seam side down, snuggly.
  8. Top with enchilada sauce and remaining shredded cheddar cheese.
  9. Bake, uncovered, for 15 minutes or until cheese has melted.
  10. Remove and top with desired toppings. Serve immediately.
