Spicy cucumber salad is so easy, flavorful, and makes a great side dish, snack, or garnish! Only 9 ingredients and 25 minutes to prepare. Vegan and easily made gluten-free.

Ingredients
- 1 large English cucumber
- ½ teaspoon fine sea salt
- 1 Tablespoon toasted sesame oil
- 2 teaspoons soy sauce or certified GF tamari
- 2 teaspoons maple syrup
- 2 teaspoons Sriracha or similar spicy chile sauce
- 1 teaspoon rice vinegar
- 2 medium cloves garlic, minced
- ½ teaspoon red pepper flakes or gochugaru, Korean chili flakes
- 1 Tablespoon sesame seeds

Instructions
- Slice the cucumber into ¼-inch thick coins. Place in a large bowl and toss with sea salt. Set aside for 15 minutes. Then rinse under cold water and pat dry.
- To make the dressing, whisk together the sesame oil, soy sauce, maple syrup, sriracha, vinegar, garlic, chili flakes, and sesame seeds. Taste and adjust the flavors as desired.
- Pour the dressing over the cucumber and gently stir. Enjoy now or refrigerate until ready to serve.
Notes
- Serving suggestions: serve as a side with sandwiches, noodles, and on top of grain bowls. Also delicious on sandwiches, wraps, and burgers.
- Store in the refrigerator for up to 4 days. Not freezer-friendly.
