Spicy Red Bean Burger

This spicy red bean burger recipe is ideal to prepare for a nice lunch al fresco with family and friends! Get cooking!

Ingredients

  • ½ tablespoon of vegetable oil
  • 2 garlic cloves minced
  • ½ cup of diced onion
  • 1 Jalapeño minced
  • 1 small tomato minced
  • 1 teaspoon of chili powder
  • ½ teaspoon of ground cumin
  • ¼ teaspoon of smoked paprika
  • 1 15-ounce can of kidney beans, rinsed and drained
  • 2 tablespoons of BBQ Sauce
  • ½ cup of bread crumbs
  • hamburger buns
  • romaine lettuce optional
  • Tomato slices optional
  • 1 Jalapeño sliced (optional)
  • crispy fried onions optional

Instructions

  1. In a large pan over medium-high heat, heat the oil. Add garlic, onion, and minced jalapeno, and cook for 5 minutes.
  2. Add minced tomato, chili powder, cumin, and paprika to the pan, continue to cook for 7 more minutes.
  3. Remove from heat and place in the refrigerator to cool.
  4. While the tomato, pepper, and onion mixture is cooling, place the beans in a food processor. Pulse beans until they are smooth and then transfer them to a large bowl.
  5. Remove onion mixture from the refrigerator and mix in with the beans. Add BBQ sauce and bread crumbs to the bean mixture.
  6. Form 4 patties out of the mixture.
  7. Cook the patties on the stove in a nonstick pan for 5 to 7 minutes on each side.
  8. Place the cooked patty on a bun, top with a slice of tomato, romaine lettuce, sliced jalapenos, and crispy fried onions.

Notes

  • Making homemade burgers can be somewhat of a messy affair, that is why we are all for making them now to enjoy them later. Whenever you have some extra time or on your meal prepping day (if you have one), take the plunge and venture into making a double (or triple) batch of these Spicy Red Bean Burgers. You can store them for one or two days in your refrigerator or freeze them for whenever the homemade burger cravings strike.
