Spicy Sriracha Green Beans

Ingredients

  • 1 pound green beans, washed + trimmed
  • 2 TBSP low sodium soy sauce (gluten-free or regular)
  • 2 TBSP Sweet chili sauce
  • 1 TBSP Sriracha plus extra to taste
  • 1 TBSP sesame oil
  • 1 tsp minced garlic 
  • 1-2 tsp toasted sesame seeds (optional)

Instructions

  1. Fill a large pan with 1 inch of water and bring to a boil. Add green beans and blanch for 3 minutes.
  2. While the green beans cook, fill a large bowl with ice water and set aside. Next whisk together your sauce by combining soy sauce, sweet chili sauce and Sriracha. I added an extra half TBSP of Sriracha to my sauce, making it about 1.5 total and found it perfectly spicy without going overboard. Feel free to add as much as you'd like to increase the heat, or adjust as desired based on your spice preference. 
  3. Empty pan into a colander to drain and add beans to your ice water to halt the cooking process, then drain once cool. This takes about a minute.
  4. Reduce burner to medium heat and add your sesame oil to the pan. Sauté minced garlic for 30 seconds, or until fragrant and simmering, then return your green beans to the pan. Mix well to coat the green beans with the oil and garlic. Add your sauce and allow to simmer for a couple minutes, uncovered, to thicken the sauce. One desired tenderness is reached they're ready to eat! Stir so the Sriracha glaze coats the green beans and dive in!

Notes

  • I used Low Sodium Gluten-Free Tamari Soy Sauce for this recipe, but your favorite soy sauce will work great! I like to stick with low-sodium so the saltiness and flavor of the dish is just right!
  • Feel free to use extra Sriracha to make this dish as spicy as you'd like!
