Description
This recipe starts by wilting fresh spinach in butter with salt and pepper to soften leaves and release flavor. The spinach is cooled before mixing into a beaten combination of egg whites, whole eggs, Italian seasoning, and garlic powder. Two cups of shredded cheddar are folded together with the spinach, then poured into a greased baking dish.
The top is sprinkled with the remaining cheese to create a melted, slightly browned crust as the dish bakes at 350 degrees Fahrenheit. It bakes uncovered for about 25-30 minutes until a knife inserted in the center comes out clean or the internal temperature reaches 160 degrees, ensuring the eggs are fully set but still moist.

Ingredients
- 1 16 ounce egg white, container
- 2 egg large
- 2 1/2 cups cheddar cheese shredded, like Colby or sharp cheddar
- 10 ounce spinach fresh
- 1 tablespoon butter
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- salt to taste
- black pepper to taste
Instructions
- Lightly grease a 9 x 13 inch baking dish and set aside.
- Preheat oven to 350 degrees.
- Heat a large skillet over medium heat and add butter. Once butter is melted add fresh spinach. Season with salt and pepper. Cook until wilted and tender (approximately 2 minutes). Remove from heat and cool.
- In a large mixing bowl whisk together egg whites, whole eggs, Italian seasoning and garlic powder.
- Fold in 2 cups of cheese with spinach and place in the prepared baking dish. Top with remaining 1/2 cup of cheese.
- OR place spinach evenly on the bottom of the prepared baking dish and add egg mixture on top followed with the remaining 1/2 cup of cheese.
- Bake uncovered for 25-30 minutes.
- To test for doneness, insert a knife in the center of the casserole. If it comes out clean, then it's done. For an exact temperature reading, the thermometer probe should reach 160 degrees.
Notes
- Substitute 10 whole eggs with 1/2 cup of milk, cream, or half and half for creamier texture.
- For thicker slices, use a smaller baking dish and bake longer until set.
