Description

The recipe starts with a crescent roll dough pressed into a baking dish, creating a flaky base.   • 1 oz. crescent rolls package
  • 2.5 cups egg white, 600g
  • 1 Tbsp ranch seasoning or other seasoning of choice
  • 1/2 cup mozzarella cheese 2%, shredded, 56g
  • 2 cups spinach baby, 85g
  • 3 oz. baby bella mushrooms sliced, 85g
  • 2 shallots thinly sliced, 50g
  • 2 oz. goat cheese crumbled, 56g
  • salt to taste
  • black pepper to taste

Instructions

  1. Preheat the oven to 350 degrees F. Spray a 9x13" baking dish with cooking spray.
  2. Open crescent rolls and place along the bottom of the dish. Press down to spread and even out along the bottom and part of the sides of the dish.
  3. Pour egg whites over crescent rolls. Sprinkle with ranch seasoning and mix around a little to spread it out. Place in the oven and bake for 20 minutes, or until egg whites have fully cooked and crescent rolls are starting to brown.
  4. Meanwhile, grab a skillet and set to medium-high heat. Spray with cooking spray and add the mushrooms and shallots. Season with salt and pepper to taste. Cook until tender, stirring frequently, about 4-5 minutes. Add the spinach the last minute. 
  5. After 20 min, take the egg white pizza out and sprinkle it with mozzarella cheese. Then top with the sautéed veggies, and finally, sprinkle with goat cheese. Place back in the oven for 5 minutes. 
  6. Once done, let cool, then slice, and enjoy!
