Ingredients
- 8 oz. spinach fresh
- 1 c. mushroom fresh, thinly sliced
- ¼ c. red onion thinly sliced
- 4 pieces Bacon
- 1 red potato thinly sliced and quartered, medium
- 2 egg peeled and thinly sliced, hard boiled
For dressing:
- 1 ½ Tbsp. flour
- 1 tsp. salt
- 3 Tbsp. maple syrup
- ¼ c. cider vinegar
- 2 c. milk
Instructions
- Cook bacon and potatoes in a medium skillet until bacon is crisp. Reserve bacon grease.
- Prepare salad by layering spinach, mushrooms, onion, eggs, crumbled bacon, and potatoes in a large bowl.
- Prepare dressing by adding flour and salt to bacon grease in skillet. Stir; then add remaining ingredients and cook over medium heat until thickened.
- Drizzle generously over salad.
