  • 1 ½ pounds top sirloin cut into 1-inch cubes, or sirloin tips or beef tenderloin
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper ground
  • 1 tablespoon vegetable oil
  • 3 tablespoons butter unsalted
  • 1 small yellow onion diced (about ½ cup
  • 2 teaspoons garlic minced
  • 2 ¼ cups beef broth 18 ounces / 540 g
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon soy sauce
  • ¼ cup water cold
  • 3 tablespoons cornstarch
  • parsley chopped for garnish

Instructions

  1. Pat the cubes of beef dry with paper towels. Season evenly on all sides with salt and pepper.
  2. To a large skillet over medium-high heat, add oil. Once hot, add the beef in a single layer. Depending on the size of the skillet, you may need to work in batches. Cook for 3-5 minutes, stirring occasionally, until browned on all sides. Transfer the browned beef to a plate and tent with aluminum foil to keep warm.
  3. Reduce the heat to medium and add butter. Once melted, add the onions. Cook for 3-5 minutes, stirring occasionally, or until softened. Add garlic and cook for 1 more minute.
  4. Add beef broth, Worcestershire sauce, and soy sauce. Stir to combine, scraping up the browned bits in the skillet.
  5. In a small bowl, whisk the water and cornstarch together. Slowly drizzle the cornstarch mixture into the skillet, whisking constantly. Bring the mixture to a boil.
  6. Once boiling, add the meat (and any juices from the plate) back into the skillet. Reduce heat to low. Simmer for 5 minutes, or until heated through*.
  7. Garnish with chopped parsley. Serve warm with egg noodles, mashed potatoes, or rice.

Notes

  • *After adding the steak bites to the sauce, just simmer until heated; do not overcook or the steak will get tough.
